Today, you will learn basics of natural yeast. This recipe is the fastest, easiest and healties yeast recipe in the world. You can use it to make bread, yogurt or boza.

Ingredients of natural yeast:

  • 15 Chickpeas
  • 1 tea spoon of sugar
  • 1 cup of boiled water
  • 2 spoon of flour 

Method of Natural Yeast

  1. By using stone or hammer, crush chickpeas to get powder of it. Powder is innovative side of my yeast recipe. Small particles accelerate the fermentation process.
  2. Boil water and add on powder of chickpeas
  3. Add flour and sugar, mix them.
  4. Close the cover of your cup.
  5. To keep it warm use a blanket. wait 12 hours. 
  6. You can use it for your bread.

After 12 hours, If you can't get same result (shown as above picture), use a cloth to cover cup. Cloth allows to breathe. Wait 4-5 hours at 28-30 degrees Celsius.

Natural Yeast for Yogurt

If you want natural yeast for yogurt, use hot milk insteady of water and flour. After 1 day, you will get small amount of yogurt particles. Collect them to make bigger particles. By using small yogurt particles, add new 1 cup of hot milk and powder of chickpeas and keep it warm by a blanket. 1 day after, you will get bigger yogurt yeast. If you think it is enough to make big yogurt use it. or repeat the process.

Note: If weather is hot in your country. Insteady of blanket, you can use a cloth on cup of yeast so that yeast can breathe.
